  • 3 ripe bananas 3 ripe bananas, mashed (about 1 1/2 cups) The browner the bananas, the sweeter the loaf.
  • 2 large eggs 2 large eggs, beaten Provides structure and moisture.
  • 1/3 cup 1/3 cup melted butter or neutral oil Butter gives a richer flavor; oil keeps it dairy-free.
  • 1 cup 1 cup self-rising flour If using all-purpose flour, see substitutions below.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, mash the ripe bananas with a fork until mostly smooth. A few small lumps add texture.
  3. Stir in the beaten eggs and melted butter until the batter is glossy and pale.
  4. Gently fold in the self-rising flour until just combined. Stop when you see no streaks of flour.
  5. Pour the batter into your prepared loaf pan and smooth the top with a spatula.
Baking
  1. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the loaf to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.

Notes

For variations, add 1/3 cup chocolate chips for a sweeter treat or 1 teaspoon cinnamon for warmth. Store tightly wrapped for up to 3 days or freeze for up to 3 months.
