Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
- In a large bowl, mash the ripe bananas with a fork until mostly smooth. A few small lumps add texture.
- Stir in the beaten eggs and melted butter until the batter is glossy and pale.
- Gently fold in the self-rising flour until just combined. Stop when you see no streaks of flour.
- Pour the batter into your prepared loaf pan and smooth the top with a spatula.
Baking
- Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
Notes
For variations, add 1/3 cup chocolate chips for a sweeter treat or 1 teaspoon cinnamon for warmth. Store tightly wrapped for up to 3 days or freeze for up to 3 months.
