Preparation
- Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment for easy removal.
- Mash the bananas in a bowl until mostly smooth, leaving a few small chunks for texture.
- Stir in the melted butter, add the sugar and beaten egg, and mix until glossy and cohesive.
- Fold in the self-rising flour gently until just combined. Avoid overmixing.
- Pour the batter into the prepared pan, smoothing the top, and tap lightly on the counter to settle.
Baking
- Bake for 45 to 55 minutes until the top is deep golden brown and a toothpick comes out mostly clean.
- Cool the loaf in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice with a serrated knife and serve warm.
Notes
For a healthier option, replace half the flour with whole wheat pastry flour or use applesauce to replace up to half the butter. Optional add-ins include chopped nuts or dark chocolate chips.
