  • 1.5 cups 1 and 1/2 cups self-rising flour You can use all-purpose flour plus 2 teaspoons baking powder and a pinch of salt.
  • 0.5 cups 1/2 cup granulated sugar Substitute with 1/3 cup for less sweetness or use brown sugar.
  • 1/3 cup 1/3 cup melted butter Replace with coconut oil for a dairy-free option.
  • 1 large egg 1 large egg, beaten Acts as the tender binder.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment for easy removal.
  2. Mash the bananas in a bowl until mostly smooth, leaving a few small chunks for texture.
  3. Stir in the melted butter, add the sugar and beaten egg, and mix until glossy and cohesive.
  4. Fold in the self-rising flour gently until just combined. Avoid overmixing.
  5. Pour the batter into the prepared pan, smoothing the top, and tap lightly on the counter to settle.
Baking
  1. Bake for 45 to 55 minutes until the top is deep golden brown and a toothpick comes out mostly clean.
  2. Cool the loaf in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  3. Slice with a serrated knife and serve warm.

Notes

For a healthier option, replace half the flour with whole wheat pastry flour or use applesauce to replace up to half the butter. Optional add-ins include chopped nuts or dark chocolate chips.
