Preparation
- Pat the chicken bites dry with paper towels and season lightly with salt and pepper.
- In a shallow bowl, whisk the eggs and water until smooth; set aside.
- In another bowl, combine breadcrumbs, Parmesan, and ranch seasoning. Stir until evenly mixed.
- Dip each chicken piece into the egg, letting excess drip off, and then press into the breadcrumb mixture until fully coated.
Cooking
- Preheat your air fryer to 400°F (200°C) for 3 minutes and lightly spray the basket with oil.
- Place the chicken bites in a single layer in the basket, ensuring they do not touch.
- Lightly mist the tops with oil and cook for 6–8 minutes.
- Flip the bites, mist again, and cook for another 6–7 minutes until golden brown and a thermometer reads 165°F (74°C).
- Remove to a wire rack to rest for 2 minutes before serving.
Notes
Serve with a variety of dips or on top of a salad for a lighter meal. Store in the fridge for up to 3 days, or freeze for up to 2 months.
