Chicken Ingredients
  • 1.5 pounds boneless, skinless chicken breasts (cut into 1-inch bites) Use thighs for juicier bites.
  • 2 large eggs (beaten with 1 tablespoon water) Substitute with buttermilk for richer tang.
Breading Mixture
  • 1 cup plain breadcrumbs or panko Use crushed cornflakes for a nostalgic twist.
  • 0.5 cup grated Parmesan cheese Omit for dairy-free; use nutritional yeast instead.
  • 1 packet ranch seasoning mix (about 1 ounce) or 2 tablespoons homemade ranch blend See recipe for homemade ranch mix.
Cooking Ingredients
  • 2 tablespoons olive oil Can use avocado oil for higher smoke point.
  • Salt and black pepper to taste

Method
 

Preparation
  1. Pat the chicken bites dry with paper towels and season lightly with salt and pepper.
  2. In a shallow bowl, whisk the eggs and water until smooth; set aside.
  3. In another bowl, combine breadcrumbs, Parmesan, and ranch seasoning. Stir until evenly mixed.
  4. Dip each chicken piece into the egg, letting excess drip off, and then press into the breadcrumb mixture until fully coated.
Cooking
  1. Preheat your air fryer to 400°F (200°C) for 3 minutes and lightly spray the basket with oil.
  2. Place the chicken bites in a single layer in the basket, ensuring they do not touch.
  3. Lightly mist the tops with oil and cook for 6–8 minutes.
  4. Flip the bites, mist again, and cook for another 6–7 minutes until golden brown and a thermometer reads 165°F (74°C).
  5. Remove to a wire rack to rest for 2 minutes before serving.

Notes

Serve with a variety of dips or on top of a salad for a lighter meal. Store in the fridge for up to 3 days, or freeze for up to 2 months.
