Ingredients

  • 2 cups all-purpose flour Measure flour properly by spooning into the cup and leveling.
  • 1 teaspoon baking soda Leavening agent.

Wet Ingredients
  • 1/2 cup butter, softened
  • 1 cup granulated sugar Reduce amount if using sweetened coconut.
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract Adds flavor.
Mix-ins
  • 1 cup unsweetened shredded coconut
  • 1 cup chopped almonds Can be toasted for extra flavor.
  • 1 cup semi-sweet chocolate chips Can substitute with dark or milk chocolate.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs and vanilla extract, mixing well.
  4. In another bowl, combine the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until just blended.
  5. Fold in the shredded coconut, chopped almonds, and chocolate chips.
  6. Drop spoonfuls of dough onto ungreased baking sheets.
  7. Bake for 10-12 minutes, or until the edges are golden brown.
  8. Let cool before transferring to a wire rack.

Notes

Cookies can be served warm or at room temperature. For gatherings, arrange on a platter or in small paper cups. Store cooled cookies in an airtight container at room temperature for up to 4 days, or freeze for up to 2 months.
