  • 4 medium Potatoes (preferably Yukon Gold) Waxy potatoes for a creamy interior.
  • 1 block Feta Cheese A block of creamy feta.
  • 2 tablespoons Olive Oil For drizzling and enhancing flavor.
  • 3 cloves Garlic Fresh minced garlic adds depth.
  • 1 tablespoon Herbs (Rosemary or Thyme) Add fresh spinach or kale for variation.
  • to taste Salt and Pepper Essential for seasoning.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut your potatoes into wedges or cubes, toss them with olive oil, salt, pepper, and herbs.
  3. Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Place the block of feta cheese in the center of the potatoes, drizzle with more olive oil, and sprinkle additional herbs and garlic on top.
Baking
  1. Roast in the oven for 35-40 minutes, until the potatoes are golden brown and tender, and the feta is soft and slightly caramelized.
Serving
  1. Remove from the oven, let cool for a few minutes, and serve. Garnish with fresh herbs if desired.

Notes

Experiment with spices like paprika or cumin for added flavor. Can substitute feta with goat cheese or vegan options.
