  • 1 cup canned pumpkin puree fresh can also work; just make sure it’s smooth!
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar feel free to adjust depending on your sweetness preference
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 1/4 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your donut pan.
  2. In a mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, beat the eggs, then stir in the canned pumpkin, oil, and vanilla extract.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Spoon the batter into the prepared donut pan, filling each cavity about halfway.
Baking
  1. Place the pan in the preheated oven and bake for about 15 minutes or until a toothpick inserted comes out clean.
Cooling
  1. Once baked, let them cool in the pan for a few minutes before transferring to a wire rack.

Notes

These donuts can be glazed with powdered sugar and milk for a sweet finish. You can also experiment with spices or mix in chocolate chips for a fun twist. Store in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
