Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line the bottom with parchment paper for easy removal.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
- In a large mixing bowl, cream the softened butter and brown sugar until pale and slightly fluffy.
- Beat in the eggs, one at a time, then stir in the vanilla.
- Fold in the mashed bananas and yogurt until combined.
- Gently fold the dry ingredients into the wet, mixing just until you no longer see streaks of flour.
- Stir in nuts or chocolate chips if using.
- Spoon the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
- Bake for 55 to 65 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Let the loaf cool in the pan for 10 minutes, then lift it out using the parchment and cool completely on a wire rack before slicing.
Notes
For a festive twist, fold in dried cranberries and orange zest. If you prefer a healthier option, replace half the flour with oat flour and use applesauce for half the butter to lower fat.
