Preparation
- Preheat the oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan and line it with parchment for easy removal.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, cream the softened butter and sugar until light and fluffy, about 2–3 minutes by hand or 1 minute in a mixer.
Mixing
- Beat in the eggs one at a time, then stir in the vanilla.
- Fold in the mashed bananas and sour cream until combined.
- Gently fold the dry ingredients into the wet mixture, stirring just until no streaks of flour remain.
- Fold in nuts or chocolate chips, if using.
Baking
- Pour the batter into the prepared loaf pan and smooth the top with a spatula. Optionally, sprinkle extra nuts or chocolate chips on top.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the loaf cool in the pan for 10 minutes, then lift out with the parchment and cool on a rack.
Notes
For a moister crumb, add an extra tablespoon of sour cream. If not using nuts, consider toasted oats or seeds for crunch. For a festive twist, add dried cranberries and orange zest.
