Ingredients
  

Dry Ingredients
  • 1 3/4 cups all-purpose flour Swap half for whole wheat for a healthy option.
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon ground cinnamon Optional, for warm spice.
Wet Ingredients
  • 1/2 cup unsalted butter, melted and slightly cooled Use coconut oil to make it dairy-free.
  • 3/4 cup granulated sugar Use 1/2 cup brown sugar for deeper molasses notes.
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 3 large very ripe bananas, mashed Use about 1 1/2 cups; the riper, the sweeter.
  • 1/2 cup plain yogurt or sour cream Adds tang and moisture; use applesauce for a lighter swap.
Optional Ingredients
  • 1/2 cup chopped walnuts or chocolate chips Walnuts make it nutty and rustic; chocolate makes it indulgent.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon until evenly combined.
  3. In a large bowl, whisk the melted butter and sugar until glossy. Add the eggs one at a time, whisking until fully incorporated.
  4. Stir in the mashed bananas, vanilla, and yogurt.
Mixing
  1. Fold the dry ingredients into the wet mixture in two additions, stirring gently until just combined.
  2. Fold in walnuts or chocolate chips if using.
Baking
  1. Spoon the batter into the prepared loaf pan and smooth the top with a spatula.
  2. Bake for 55-65 minutes, or until a toothpick inserted comes out clean.
  3. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool fully.

Notes

If you love a nutty crust, sprinkle extra chopped nuts on top before baking. For a celebration, fold in a handful of dried cranberries and orange zest.
