Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking pan and line it with parchment for easy removal.
  2. In a large bowl, mash the overripe bananas until mostly smooth. Stir in the melted butter and sugar.
  3. Add the eggs and vanilla, whisking until glossy and cohesive.
  4. Sift together the flour, cocoa powder, baking powder, and salt into the wet ingredients. Fold gently until just combined.
  5. Stir in chocolate chips or chopped chocolate and any nuts or mix-ins.
Baking
  1. Pour the batter into your prepared pan, smoothing the top with a spatula.
  2. Bake for 25–30 minutes, rotating halfway through.
  3. Cool in the pan on a wire rack for at least 20 minutes before lifting out and slicing.

Notes

For even baking, rotate the pan halfway through and watch the baking time closely. Use very ripe bananas for best flavor.
