  • 2 pieces ripe bananas The riper, the better for sweetness.
  • 1 cup brown sugar Or replace with 3/4 cup granulated sugar for a lighter touch.
  • 0.5 cup unsalted butter Melted; can substitute with coconut oil for a healthier option.
  • 1 piece egg Or replace with 1 flax seed 'egg' for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Whole wheat flour can also be used.
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup semi-sweet chocolate chips Dark chocolate can be used for a richer flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Add in the melted butter and stir until well combined.
  4. Mix in brown sugar, followed by the egg and vanilla extract. Whisk until smooth.
  5. In another bowl, combine flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, stirring just until combined.
  6. Fold in chocolate chips gently.
  7. Drop tablespoons of dough onto a lined baking sheet, spacing them adequately.
Baking
  1. Bake for 10-12 minutes or until the edges are golden brown.
  2. Cool on a wire rack before serving.

Notes

These cookies can be stored in an airtight container at room temperature for up to a week. Dough can be frozen for fresh cookies anytime!
