Preparation
- Preheat your grill or grill pan over medium-high heat.
- In a bowl, toss the chicken cubes with olive oil, salt, and pepper.
- Thread the chicken onto skewers.
Cooking
- Grill the skewers for 5-7 minutes on each side, or until they are fully cooked.
- While the chicken is grilling, prepare the bang bang sauce by mixing mayo, sweet chili sauce, sriracha, and lime juice in a bowl.
- Once cooked, remove the skewers from the grill and drizzle with the bang bang sauce.
- Garnish with chopped green onions and serve immediately.
Notes
To store, refrigerate cooked skewers in an airtight container for up to 3 days; store sauce separately. For reheating, warm gently in the oven for 8-10 minutes or on a grill pan. Cooked skewers can be frozen for up to 2 months.
