  • 1 lb chicken breast, cut into cubes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Wooden or metal skewers
Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha (adjust for heat level)
  • 1 tablespoon lime juice
Garnish
  • Chopped green onions for garnish

Method
 

Preparation
  1. Preheat your grill or grill pan over medium-high heat.
  2. In a bowl, toss the chicken cubes with olive oil, salt, and pepper.
  3. Thread the chicken onto skewers.
Cooking
  1. Grill the skewers for 5-7 minutes on each side, or until they are fully cooked.
  2. While the chicken is grilling, prepare the bang bang sauce by mixing mayo, sweet chili sauce, sriracha, and lime juice in a bowl.
  3. Once cooked, remove the skewers from the grill and drizzle with the bang bang sauce.
  4. Garnish with chopped green onions and serve immediately.

Notes

To store, refrigerate cooked skewers in an airtight container for up to 3 days; store sauce separately. For reheating, warm gently in the oven for 8-10 minutes or on a grill pan. Cooked skewers can be frozen for up to 2 months.
