  • Salt and pepper, to taste
  • ½ cup mayonnaise Try using Greek yogurt for a lighter version.
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha Adjust to your spice preference.
  • Bamboo skewers (soaked in water for 30 minutes prior to grilling)

Preparation
  1. Preheat your grill to medium-high heat. If you’re using an oven, preheat to 425°F (220°C).
  2. In a bowl, combine the mayonnaise, sweet chili sauce, and sriracha. This sauce will serve as both a marinade and a dipping sauce.
  3. Season the chicken pieces with salt and pepper, then toss them in half of the sauce mixture, ensuring they’re well-coated.
  4. Dip each chicken piece into the panko breadcrumbs, making sure they’re fully covered for that delightful crunch.
  5. Thread the coated chicken pieces onto the soaked bamboo skewers, spacing them evenly.
Cooking
  1. Grill the skewers on each side for about 5-6 minutes or until the chicken is fully cooked and has beautiful grill marks. Use a meat thermometer to confirm the internal temperature reaches 165°F (74°C).
  2. Once done, remove from the grill and drizzle with the remaining sauce for an extra punch of flavor.

Notes

You can incorporate vegetables like bell peppers, zucchini, or yellow squash threaded alongside the chicken. Store leftovers in an airtight container for up to 3 days in the fridge.
