Ingredients

Main Ingredients
  • 2 slices slices of your favorite bread Sourdough works great for extra flavor.
  • 1 cup cooked chicken, shredded Leftover rotisserie chicken works well.
  • 1/4 cup barbecue sauce Adjust based on taste.
  • 1 cup shredded cheese Mozzarella or cheddar melts beautifully.
  • 1 tablespoon butter For a golden, crispy crust.
Optional Add-Ins
  • to taste sliced jalapeños For a spicy kick.
  • to taste red onion For extra crunch.

Method

Preparation
  1. In a bowl, combine the shredded chicken with barbecue sauce until well coated. Adjust the amount of sauce to your preference.
  2. Place a skillet over medium heat and add the butter, allowing it to melt until it bubbles gently.
Assembly and Cooking
  1. Lay one slice of bread on a clean surface. Top it with half of the cheese, followed by the BBQ chicken mixture, and then the remaining cheese. Finally, place the second slice of bread on top.
  2. Carefully place the sandwich in the skillet. Cook for about 3-4 minutes, until the bread is golden brown. Use a spatula to flip it over and grill the other side for an additional 3-4 minutes, or until the cheese is melted and the bread is perfectly crisp.
Serving
  1. Remove from the skillet and slice diagonally. Enjoy your BBQ Chicken Grilled Cheese while it’s still warm and gooey!

Notes

For variations, try using whole grain or gluten-free bread, or incorporate veggies like spinach or arugula. Store leftovers in an airtight container for up to 2 days, and reheat in a skillet to maintain crunchiness. Experiment with different cheeses for varied flavors.
