Preparation
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment.
- Mash the bananas in a large mixing bowl until mostly smooth with a few small lumps.
- Stir the melted butter into the mashed bananas until combined.
- Mix in the sugar, beaten egg, and vanilla extract until glossy.
- Sprinkle baking soda and salt over the mixture, then fold in the flour until just combined.
- Pour the batter into your prepared pan and smooth the top.
Baking
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Store wrapped at room temperature for up to 3 days, or refrigerate for up to 7 days. Can be frozen for up to 3 months.
