Preparation
- Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
- In a large bowl, whisk together pumpkin puree, sugar, and oil until well combined. Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
- Fold in chopped nuts or chocolate chips if using.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
This bread can be stored in an airtight container at room temperature for up to 3 days, or refrigerated for about a week. It can be frozen for up to 3 months.
