Ingredients
  

For the Sliders
  • 1 pound ground beef (80/20) Can swap with ground turkey or plant-based crumbles for a healthier option.
  • 12 slider buns slider buns or mini brioche buns Use sesame seeds for classic look.
  • 6 slices American cheese, halved Cheddar or Swiss can be used for a sharper twist.
  • 1 cup shredded iceberg lettuce Can swap with spinach or kale.
  • 1/2 cup dill pickle slices
  • 1 small onion, finely chopped Or thinly sliced for crunch.
  • 1 tablespoon butter, melted For toasting buns.
For the Special Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 2 teaspoons sweet pickle relish
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Method
 

Make the Special Sauce
  1. In a bowl, whisk together mayonnaise, ketchup, yellow mustard, sweet pickle relish, garlic powder, and onion powder. Season with a pinch of salt and pepper. Taste and adjust — the sauce should be tangy and slightly sweet. Refrigerate while you cook so flavors meld.
Form the Patties
  1. Divide the ground beef into 12 equal balls (about 1.3 ounces each) and gently flatten into thin patties slightly larger than your buns. Salt and pepper both sides.
Cook the Patties
  1. Heat a large skillet or griddle over medium-high heat until shimmering. Place patties in the pan, listening for that immediate sizzle — it means the crust will form. Cook 1.5 to 2 minutes per side for medium, adding the cheese halves to the patties in the final 30 seconds so it melts.
Toast the Buns
  1. While patties cook, brush buns lightly with melted butter and toast face-down in another pan or the same skillet until golden.
Assemble the Sliders
  1. Spread a generous teaspoon of sauce on both the top and bottom bun. Layer bottom bun with a bit of shredded lettuce, a cheesed patty, a pickle slice, and a scattering of chopped onion. Crown with the sauced top bun.
Serve Warm
  1. Arrange on a platter, tuck napkins nearby, and let everyone help themselves to the comforting mini burgers.

Notes

For a lower-fat version, use 90/10 beef and Greek yogurt mixed with a little mayo in the sauce. If you like heat, add a teaspoon of sriracha to the sauce.
