Ingredients

For the Special Sauce
  • ½ cup mayonnaise
  • 2 tbsp finely chopped dill pickles
  • 1 tbsp yellow mustard
  • 1 tsp white vinegar
  • 1 tsp paprika
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
For the Wraps
  • 1 lb lean ground beef
  • ½ cup finely chopped onion
  • Salt and pepper (to taste)
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • Dill pickle slices (optional)
  • 1 tbsp olive oil

Method

Preparation
  1. In a small bowl, combine mayonnaise, finely chopped dill pickles, yellow mustard, white vinegar, paprika, garlic powder, and onion powder. Stir until smooth and chill while you prepare the rest.
Cooking the Beef
  1. Heat 1 tbsp olive oil in a skillet over medium-high heat. Add finely chopped onion and sauté until translucent (2–3 minutes). Add 1 lb lean ground beef, breaking it up with a spatula. Season with salt and pepper to taste. Cook until browned and cooked through, about 6–8 minutes. Drain excess fat if needed.
Assembling the Wraps
  1. Warm the flour tortillas in a dry skillet or microwave for a few seconds until pliable. Spread a generous spoonful of the prepared special sauce down the center of each tortilla. Top with cooked beef, shredded lettuce, shredded cheddar cheese, and dill pickle slices if using.
Serving
  1. Fold the bottom of the tortilla up over the filling, then fold the sides in and roll tightly. Slice in half if desired and serve immediately.

Notes

Drain excess fat from the cooked beef to keep the wraps from getting greasy. Warm tortillas briefly to make them more pliable and less likely to tear. Chop pickles finely for the sauce for a smoother flavor experience.
