  • 2 cups broth (vegetable or chicken)
  • 1 can black beans (drained and rinsed)
  • 1 lb sausage (smoked sausage, kielbasa, or any of your choice)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 medium bell pepper (chopped)
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Preparation
  1. Gather all your ingredients; this will make the cooking process smoother.
Cooking
  1. In a large skillet, over medium heat, add the sliced sausage. Cook until browned and slightly crispy, about 5-7 minutes. Remove and set aside.
  2. In the same skillet, add the diced onion and bell pepper. Sauté until soft, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Sprinkle in cumin and paprika, mixing well to coat the vegetables.
  5. Add the uncooked rice to the mixture, followed by the broth. Stir well to combine.
  6. Bring to a gentle boil, then cover and reduce heat to low. Let simmer for 15 minutes.
  7. Once the rice is tender, add the black beans and cooked sausage back to the pan. Stir gently to combine and warm through.
  8. Taste and adjust the seasoning with salt and pepper as needed.

Notes

Feel free to swap the sausage for a vegetarian option or use quinoa instead of rice for a healthy spin. For an extra touch, serve with a squeeze of lime or sliced avocado.
