Pasta and Vegetables
  • 8 ounces rotini pasta (or your favorite pasta shape)
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped iceberg or romaine lettuce
Dressing
  • ½ cup mayonnaise (or Greek yogurt for a healthier option)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Preparation
  1. In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside to cool.
  2. In a skillet over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon and place on paper towels to drain excess grease.
  3. In a small bowl, whisk together the mayonnaise, apple cider vinegar, garlic powder, salt, and pepper until smooth and creamy.
  4. In a large bowl, combine the cooled pasta, bacon, cherry tomatoes, and chopped lettuce. Pour the dressing over the top and gently toss to combine.
  5. For the best flavor, let the salad chill in the refrigerator for at least 30 minutes before serving.
