  • 1 pound breakfast sausage can substitute with turkey sausage
  • 4 cups diced potatoes fresh or frozen
  • 1 cup shredded cheese cheddar, mozzarella, or your favorite
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) while you prepare the casserole.
  2. In a large skillet over medium heat, cook the breakfast sausage until browned and crumbled. Drain any excess grease.
  3. In a mixing bowl, whisk together the eggs and milk until fully combined. Season with salt and pepper.
  4. In a large baking dish, layer the diced potatoes, cooked sausage, and any optional vegetables. Pour the egg mixture over the top and sprinkle with cheese.
Cooking
  1. Cover the dish with aluminum foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 15 minutes, or until the eggs are set and the casserole is golden on top.
  3. Let it cool for a few minutes. Cut into squares and serve warm.
