Ingredients
  

For the Cookie Layer
  • 1 cup unsalted butter, softened You can use coconut oil for a dairy-free option.
  • 1 cup brown sugar, packed Provides the chewy texture.
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips Semi-sweet or dark, depending on your preference.
For the Brownie Layer
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream the softened butter with the brown sugar and granulated sugar until fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, combine the flour, baking soda, and salt. Gradually add this to the wet mixture and fold in the chocolate chips.
  5. In a separate bowl, blend the melted butter and granulated sugar for the brownie layer until smooth.
  6. Add the eggs and vanilla, mixing well.
  7. In a smaller bowl, whisk together the cocoa, flour, salt, and baking powder. Gradually stir this into the wet mixture.
Layering and Baking
  1. Spread about two-thirds of the cookie dough in the bottom of a greased 9x13 inch baking dish.
  2. Pour the brownie batter over the cookie layer and smooth it out.
  3. Drop spoonfuls of the remaining cookie dough on top of the brownie layer.
  4. Bake in the preheated oven for 25-30 minutes.
Cooling
  1. Let the Brookie Cookies cool in the pan for at least 20 minutes before cutting them into squares.

Notes

You can customize your Brookie Cookies by adding nuts, different types of chocolate chips, or even espresso powder. Store leftovers in an airtight container for up to a week or freeze for longer storage.
