  • 4 pieces boneless, skinless chicken breasts
  • 2 cups diced tomatoes (fresh is best)
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the diced tomatoes, fresh basil, balsamic vinegar, olive oil, salt, and pepper.
  3. Season the chicken breasts with salt and pepper on both sides.
Cooking
  1. In a large oven-safe skillet, heat a drizzle of olive oil over medium-high heat. Once the oil is shimmering, add the chicken breasts and sear them for about 3-4 minutes per side until golden brown.
  2. Layer the tomato mixture evenly over each chicken breast.
  3. Sprinkle the shredded mozzarella cheese on top.
  4. Transfer the skillet to the preheated oven and cook for 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  5. Garnish with extra basil if desired before serving.

Notes

Feel free to substitute fresh basil for arugula or add minced garlic for extra flavor. Perfect for serving with garlic bread and a mixed green salad.
