Method
Cooking the Beef
- Heat the oil in a large skillet over medium-high heat. When the oil shimmers, add the diced onion and cook until soft and translucent, about 4–5 minutes.
- Add the garlic and cook for 30 seconds until fragrant. Stir in the ground beef, breaking it up with a wooden spoon. Cook until browned and slightly crisped in places, about 6–8 minutes.
- Sprinkle in the smoked paprika, salt, and pepper, and stir to coat. Pour the Worcestershire sauce over the meat and let it sizzle for a minute.
- If using corn, add it to the skillet now and let it roast in the residual heat for 2–3 minutes. Stir in the cherry tomatoes to warm them through.
Assembling the Bowls
- Prepare your base: divide cooked rice or quinoa into bowls, or lay down a bed of mixed greens.
- Spoon the seasoned beef mixture over the base, sprinkle with shredded cheese, and top with pickles, ketchup, mustard, and garnishes.
- Serve immediately, letting everyone build their perfect bite.
Notes
Tossing greens with a squeeze of lemon brightens the bowl. Add cayenne or hot sauce for heat. Store components separately for best results and reheat beef gently in a skillet.
