Beef Mixture
  • 1 pound ground beef (80/20) Can swap for ground turkey or plant-based crumble.
  • 1 tablespoon olive oil or neutral oil Butter can be used for richness.
  • 1 medium onion, diced Caramelize for sweetness or use red onion for sharpness.
  • 2 cloves garlic, minced Or use 1 teaspoon garlic powder.
  • 1 teaspoon smoked paprika Regular paprika can be used, toast briefly for more depth.
  • 1 teaspoon Worcestershire sauce Substitute soy sauce for gluten-free option.
  • Salt and freshly ground black pepper, to taste
  • 1 cup corn kernels Can be fresh or frozen, roasted for a smoky crunch.
  • 1 cup cherry tomatoes, halved Sun-dried tomatoes can be used for concentrated flavor.
Toppings
  • 4 cups mixed greens or baby spinach Kale can be used for a heartier option.
  • 1 cup shredded cheddar Use favorite melty cheese or omit for dairy-free.
  • Pickles, diced, and a drizzle of ketchup and mustard Or a tangy burger sauce.
  • Optional: cooked rice, quinoa, or cauliflower rice For a more filling base.

Method
 

Cooking the Beef
  1. Heat the oil in a large skillet over medium-high heat. When the oil shimmers, add the diced onion and cook until soft and translucent, about 4–5 minutes.
  2. Add the garlic and cook for 30 seconds until fragrant. Stir in the ground beef, breaking it up with a wooden spoon. Cook until browned and slightly crisped in places, about 6–8 minutes.
  3. Sprinkle in the smoked paprika, salt, and pepper, and stir to coat. Pour the Worcestershire sauce over the meat and let it sizzle for a minute.
  4. If using corn, add it to the skillet now and let it roast in the residual heat for 2–3 minutes. Stir in the cherry tomatoes to warm them through.
Assembling the Bowls
  1. Prepare your base: divide cooked rice or quinoa into bowls, or lay down a bed of mixed greens.
  2. Spoon the seasoned beef mixture over the base, sprinkle with shredded cheese, and top with pickles, ketchup, mustard, and garnishes.
  3. Serve immediately, letting everyone build their perfect bite.

Notes

Tossing greens with a squeeze of lemon brightens the bowl. Add cayenne or hot sauce for heat. Store components separately for best results and reheat beef gently in a skillet.
