  • 1 cup long-grain white rice Toast for nuttier flavor before adding broth
  • 2 each bell peppers, diced
  • 1 tbsp Cajun seasoning Adjust to taste
  • 1 each onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth Add more if the skillet becomes too dry
  • 1 tbsp olive oil For cooking

Method
 

Cooking Steps
  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced smoked sausage and cook until browned.
  3. Add diced onion and minced garlic; sauté until soft.
  4. Stir in diced bell peppers and cook for a few more minutes.
  5. Add rice and Cajun seasoning; stir to combine.
  6. Pour in chicken broth and bring to a boil.
  7. Reduce heat, cover, and simmer for about 20 minutes, or until rice is cooked.
  8. Fluff with a fork and serve hot.

Notes

Serve straight from the skillet for casual meals. Garnish with chopped green onions or parsley. Offer hot sauce on the side for extra heat.
