- Stir in the rice, allowing it to absorb the flavors for about 2 minutes.
- Add the chicken broth, diced tomatoes, and Cajun seasoning to the skillet. Stir everything together, ensuring the rice is fully submerged in liquid.
- Bring the mixture to a boil, then cover and reduce to a simmer for 20 minutes, or until the rice is tender and has absorbed the liquid.
- Once cooked, fluff the rice with a fork, season with salt and pepper to taste, and garnish with fresh parsley before serving.
Notes
Feel free to make it spicy by adding diced jalapeños or a splash of hot sauce. A vegetarian version can be made by substituting the sausage with chickpeas or lentils.
