  • 1 lb Cajun sausage (andouille works wonderfully)
  • 1 cup long-grain rice (or brown rice for a healthier option)
  • 1 medium onion, diced
  • 1 piece bell pepper, diced (red or green)
  • 3 cloves garlic, minced
  • 2 cups chicken broth (or vegetable broth for a vegetarian twist)
  • 1 can diced tomatoes (14 oz, with juices)
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon olive oil For cooking

Method
 

Cooking Instructions
  1. In a large skillet, warm the olive oil over medium heat.
  2. Add the sliced Cajun sausage to the skillet and cook until browned, about 5-7 minutes.
  3. Toss in the diced onion and bell pepper, and sauté until they soften, approximately 3-4 minutes. Add the minced garlic and cook until fragrant.
  4. Stir in the rice, allowing it to absorb the flavors for about 2 minutes.
  5. Add the chicken broth, diced tomatoes, and Cajun seasoning to the skillet. Stir everything together, ensuring the rice is fully submerged in liquid.
  6. Bring the mixture to a boil, then cover and reduce to a simmer for 20 minutes, or until the rice is tender and has absorbed the liquid.
  7. Once cooked, fluff the rice with a fork, season with salt and pepper to taste, and garnish with fresh parsley before serving.

Notes

Feel free to make it spicy by adding diced jalapeños or a splash of hot sauce. A vegetarian version can be made by substituting the sausage with chickpeas or lentils.
