  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced Andouille or kielbasa recommended for best flavor.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1 cup heavy cream Can be substituted with half-and-half for a lighter version.
  • 1 cup shredded cheese (like cheddar or pepper jack)
  • to taste Salt and pepper
  • Chopped parsley for garnish

Method
 

Cooking Instructions
  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large pot, heat olive oil over medium heat. Add the sliced sausage and cook until browned.
  3. Add the onion, bell pepper, and garlic, and sauté until the vegetables are softened.
  4. Stir in the Cajun seasoning and cook for another minute.
  5. Pour in the heavy cream and bring to a simmer.
  6. Add the cooked pasta and stir in the cheese until melted and creamy.
  7. Season with salt and pepper to taste. Serve hot, garnished with chopped parsley.
