  • 8 oz pasta (penne or fusilli)
  • 1 lb smoked sausage (sliced)
  • 1 onion (chopped)
  • 1 bell pepper (chopped)
  • 3 cloves garlic (minced)
  • 1 tsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup shredded cheese (like cheddar or pepper jack)
  • Salt and pepper to taste
  • splash Olive oil
  • Fresh parsley (for garnish)

Method
 

Preparation
  1. In a large pot or skillet, heat a splash of olive oil over medium heat. Add the sliced sausage and cook until browned.
  2. Add the chopped onion and bell pepper, cooking until softened.
  3. Stir in the minced garlic and Cajun seasoning, cooking for another minute.
  4. Add the pasta and enough water to cover it. Bring to a boil and cook until pasta is al dente.
  5. Reduce heat and stir in the heavy cream and cheese until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

Use smoked sausage for depth of flavor. For a looser sauce, reserve pasta cooking water or add more cream. Taste for seasoning before serving.
