Method
Preparation
- Preheat the oven to 350℉.
- In a skillet over medium-high heat, add the ground beef and cook until browned, stirring occasionally. Drain off excess fat.
- In a mixing bowl, combine biscuit mix and water until well mixed. Press the dough into a greased casserole dish and bake for 5-8 minutes until set and lightly golden.
- Add chopped onions and red bell pepper to the cooked ground beef. Cook for about 4 minutes, then add taco seasoning and mix well. Remove from heat.
Assembling
- Spread the ground beef mixture evenly over the baked biscuit layer.
- In a bowl, combine sour cream, mayonnaise, green chiles, ¾ cup shredded cheese, and garlic powder. Mix until smooth and spread over the beef layer.
- Dot small spoonfuls of salsa over the sour cream layer and sprinkle the remaining cheese on top.
Baking
- Bake the assembled casserole in the oven uncovered for 30 minutes or until hot and bubbly.
Notes
Let the casserole rest 5–10 minutes after baking for cleaner slices. Serve with garnishes like chopped cilantro or green onions.
