  • 1 lb Ground Beef
  • 1 Onion, chopped
  • 1/2 Red Bell Pepper, chopped
  • 1/2 Green Bell Pepper, chopped
  • 1/2 Yellow Bell Pepper, chopped
  • 2 tsp Minced Garlic
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Dried Basil
  • Salt and Pepper to taste
  • 1 can Diced Tomatoes
  • 2 cups Beef Broth
  • 2/3 cup Rice
  • 1 1/2 cups Shredded Cheddar Cheese

Method
 

Cooking
  1. Over medium-high heat, cook the ground beef, onion, and bell peppers in a skillet until the meat is browned and the vegetables are soft.
  2. Drain any excess fat.
  3. Add minced garlic, oregano, basil, salt, and pepper. Stir and sauté for 30 seconds.
  4. Mix in diced tomatoes, beef broth, and rice. Bring to a light boil, then reduce to a simmer.
  5. Cover and cook for 20 minutes.
  6. Top the mixture with cheddar cheese. Cover again and cook until the cheese is melted.
  7. Serve hot and enjoy.

Notes

Feel free to customize the dish by adding your favorite vegetables or spices. For a little extra kick, add a pinch of red pepper flakes. If you prefer brown rice, you may need to adjust the cooking time, as it takes longer to cook than white rice. If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. To reheat, warm it on the stove or in the microwave until heated through.
