Casserole Ingredients
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 cup broccoli florets (fresh or frozen) Fresh broccoli can be substituted with frozen.
  • 1 cup long-grain white rice Cooked before mixing with other ingredients.
  • 2 cups chicken broth
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup shredded cheddar cheese Add more if you like it cheesy!
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a large casserole dish.
  2. In a large mixing bowl, combine the shredded chicken, broccoli florets, cooked rice, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Stir until everything is well combined.
  3. Pour the mixture into the prepared casserole dish, spreading it evenly.
  4. Sprinkle the shredded cheddar cheese generously over the top.
Cooking
  1. Bake in the preheated oven for about 25-30 minutes or until the cheese is melted and bubbly, and the casserole is heated through.
  2. Allow it to cool for a few minutes before serving to help it hold together.

Notes

Feel free to swap in brown rice for a healthier option or add spices for flavor. Leftovers can be stored in the fridge for up to three days or frozen for up to three months.
