Ingredients
  

For the Meatballs
  • 1 pound ground beef (or ground turkey for a lighter option) Use lean ground turkey for a healthier twist.
  • 1 cup breadcrumbs Gluten-free breadcrumbs can be used for a healthier option.
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley Or use 2 tablespoons dried parsley.
  • 2 cloves garlic, minced
  • 1 each egg
  • to taste Salt and pepper
For Assembly
  • 2 cups marinara sauce Store-bought or homemade.
  • 4 each sub rolls Choose your favorite type.
  • 2 cups shredded mozzarella cheese

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, Parmesan, parsley, garlic, egg, salt, and pepper. Mix well until all ingredients are fully incorporated.
  3. Shape the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.
Cooking
  1. Cook the meatballs in the preheated oven for 15-20 minutes, until they are cooked through and nicely browned.
  2. While the meatballs are baking, slice the sub rolls down the middle but not all the way through.
  3. In a saucepan, warm the marinara sauce over medium heat. Once the meatballs are done, add them gently to the sauce, ensuring they’re fully covered.
  4. Fill each sub roll with meatballs and generously ladle more marinara sauce on top.
  5. Sprinkle a generous amount of shredded mozzarella cheese over the meatball-filled subs.
  6. Place the filled sub rolls back in the oven for about 5 minutes, just until the cheese is melted and bubbly.
  7. Remove from the oven, let cool slightly, and serve to your eagerly waiting family and friends!

Notes

Consider serving these Cheesy Meatball Subs with a side of crispy baked fries, a fresh garden salad, or garlic bread. Leftover meatball subs can be stored in an airtight container in the refrigerator for up to three days. To reheat, warm them in the oven at 350°F (175°C).
