  • 1 pound ground beef (or substitute with ground turkey or plant-based alternative)
  • 2 cups frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1 cup shredded monterey jack cheese
  • 1/2 cup sour cream
  • 1/4 cup Taco Bell chipotle sauce Adjust to taste
  • 6 large flour tortilla wraps
  • Salt and pepper to taste
  • Diced tomatoes
  • Chopped green onions
  • Cilantro

Method
 

Preparation
  1. Preheat the oven and cook the frozen tater tots according to the package instructions until golden and crispy.
  2. In a skillet over medium heat, brown the ground beef. Season with salt and pepper to taste, and cook thoroughly until no longer pink, then drain any excess grease.
  3. In a large mixing bowl, combine the cooked ground beef, slightly crushed tater tots, shredded cheddar cheese, and shredded monterey jack cheese. Mix thoroughly to ensure even distribution of flavors.
  4. Warm the flour tortillas in a dry skillet or microwave for 10-15 seconds to make them pliable.
Assembly
  1. Spoon a generous amount of the filling mixture onto the center of each tortilla. Drizzle each with Taco Bell chipotle sauce and add a dollop of sour cream.
  2. Fold the sides of the tortilla over the filling, then fold the bottom up and roll tightly.
  3. Place the burritos seam side down in a baking dish. Sprinkle additional shredded cheese over the top.
Baking
  1. Bake in a preheated oven for 5-7 minutes until the cheese melts and bubbles.
  2. Remove from the oven and garnish with diced tomatoes, chopped green onions, and cilantro. Serve hot with extra sour cream and chipotle sauce on the side.

Notes

Keep tater tots slightly under-crisped if baking longer. Warm tortillas briefly before filling to prevent cracking. Drain excess grease from cooked meat.
