Preparation
- Preheat the oven and cook the frozen tater tots according to the package instructions until golden and crispy.
- In a skillet over medium heat, brown the ground beef. Season with salt and pepper to taste. Cook thoroughly until no longer pink, then drain any excess grease.
- In a large mixing bowl, combine the cooked ground beef, crispy tater tots (slightly crushed), shredded cheddar cheese, and shredded monterey jack cheese. Mix thoroughly.
- Warm the flour tortillas in a dry skillet or microwave them for 10-15 seconds to make them pliable.
Assembly
- Spoon a generous amount of the filling mixture onto the center of each tortilla. Drizzle with chipotle sauce and add a dollop of sour cream.
- Fold the sides of the tortilla over the filling, then fold the bottom up and roll tightly to form a burrito.
- Place the burritos seam side down in a baking dish. Sprinkle additional shredded cheese over the top.
Baking
- Bake in a preheated oven for 5-7 minutes until the cheese melts and bubbles.
Serving
- Remove the burritos from the oven and garnish with optional diced tomatoes, chopped green onions, and cilantro. Serve hot.
Notes
For extra crispiness, bake tater tots a minute or two longer. Warm tortillas just enough to make them flexible. Use a mix of cheeses for flavor and meltability. Drain excess grease to prevent soggy burritos.
