  • 1 pound ground beef (or substitute with ground turkey or plant-based alternative)
  • 2 cups frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1 cup shredded monterey jack cheese
  • 1/2 cup sour cream
  • 1/4 cup Taco Bell chipotle sauce (adjust to taste)
  • 6 large flour tortilla wraps
  • Salt and pepper to taste

  • Diced tomatoes
  • Chopped green onions
  • Cilantro

Method
 

Preparation
  1. Preheat the oven and cook the frozen tater tots according to the package instructions until golden and crispy.
  2. In a skillet over medium heat, brown the ground beef. Season with salt and pepper to taste. Cook thoroughly until no longer pink, then drain any excess grease.
  3. In a large mixing bowl, combine the cooked ground beef, crispy tater tots (slightly crushed), shredded cheddar cheese, and shredded monterey jack cheese. Mix thoroughly.
  4. Warm the flour tortillas in a dry skillet or microwave them for 10-15 seconds to make them pliable.
Assembly
  1. Spoon a generous amount of the filling mixture onto the center of each tortilla. Drizzle with chipotle sauce and add a dollop of sour cream.
  2. Fold the sides of the tortilla over the filling, then fold the bottom up and roll tightly to form a burrito.
  3. Place the burritos seam side down in a baking dish. Sprinkle additional shredded cheese over the top.
Baking
  1. Bake in a preheated oven for 5-7 minutes until the cheese melts and bubbles.
Serving
  1. Remove the burritos from the oven and garnish with optional diced tomatoes, chopped green onions, and cilantro. Serve hot.

Notes

For extra crispiness, bake tater tots a minute or two longer. Warm tortillas just enough to make them flexible. Use a mix of cheeses for flavor and meltability. Drain excess grease to prevent soggy burritos.
