  • 1 cup corn kernels fresh, frozen, or canned
  • 2 tablespoons butter melted
  • 1 tablespoon olive oil
  • 1 bunch cilantro chopped (optional)
  • 1 lime lime cut into wedges for brightness
  • 1 package store-bought brownie mix and vanilla ice cream optional indulgent dessert

Preparation
  1. Preheat your oven to 350°F (175°C). Line a rimmed baking sheet with parchment or lightly grease a baking dish if assembling sliders.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef or turkey and cook, breaking it up with a spoon, until browned and aromatic — about 6 to 8 minutes.
  3. Stir in taco seasoning and a splash of water (about 1/4 cup). Add black beans and corn, then reduce heat and simmer 3 to 4 minutes.
  4. Split slider buns and brush the insides with melted butter. Layer the bottom halves on your baking sheet or dish.
  5. Spoon the meat mixture evenly over each bun bottom, sprinkle a generous handful of shredded cheddar, then cap with the top buns.
  6. Bake for 10 to 12 minutes until cheese is bubbly and the tops are golden. A final broil for 1 minute will add a toasty finish.
  7. Remove from oven and let rest 2 minutes. Serve with salsa, sour cream or Greek yogurt, cilantro, and lime wedges.

Notes

For healthy options, use oven-roasted sweet potato rounds instead of buns and for vegetarian options, swap meat for seasoned lentils or crumbled tempeh. Keep sauces separate to maintain bun texture.
