Preparation
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork; bake them for about 45-60 minutes until tender.
Cooking
- In a skillet over medium heat, cook the ground beef until browned.
- Drain excess fat and stir in taco seasoning and water; simmer for 5 minutes.
- Once the potatoes are cooked, slice them open and fluff the insides with a fork.
- Spoon the taco beef mixture into the potatoes.
- Top with shredded cheese and return to the oven for an additional 5-10 minutes until the cheese is melted.

- Serve with your favorite taco fixings.
Notes
If you have leftovers, store the Cheesy Taco Potatoes in an airtight container in the refrigerator for up to 3 days. To reheat, place in the oven or microwave until heated through.
