  • 1 pound lean ground beef
  • 4 to 6 medium Russet potatoes
  • 1 packet taco seasoning (1 ounce)
  • 1/2 cup water
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Taco fixings (sour cream, lettuce, tomatoes, etc.) For topping and customization

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork; bake them for about 45-60 minutes until tender.
Cooking
  1. In a skillet over medium heat, cook the ground beef until browned.
  2. Drain excess fat and stir in taco seasoning and water; simmer for 5 minutes.
  3. Once the potatoes are cooked, slice them open and fluff the insides with a fork.
  4. Spoon the taco beef mixture into the potatoes.
  5. Top with shredded cheese and return to the oven for an additional 5-10 minutes until the cheese is melted.
Serving
  1. Serve with your favorite taco fixings.

Notes

If you have leftovers, store the Cheesy Taco Potatoes in an airtight container in the refrigerator for up to 3 days. To reheat, place in the oven or microwave until heated through.
