  • 4 large russet potatoes, peeled and cubed Can substitute with sweet potatoes for a twist.
  • 1 pound Ground Beef or Turkey, seasoned with taco spices
  • 2 cups Shredded Cheese (cheddar or favorite blend)
  • 1 packet Taco Seasoning Or homemade for fresher flavor.
Toppings
  • Sour Cream For topping.
  • Green Onions, chopped For garnish.
  • Olives, sliced Optional, for a briny bite.
  • Tomatoes, diced For freshness.
  • Lettuce, shredded For a crunchy element.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the potatoes, placing them into a large pot of salted water. Bring to a boil and cook for about 10-15 minutes until they are fork-tender.
  3. While the potatoes cook, brown the ground beef or turkey in a skillet over medium heat. Drain any excess fat and mix in the taco seasoning.
Combine and Bake
  1. Once the potatoes are tender, drain them and return them to the pot. Gently mash them, then fold in half of the cheese and the taco meat.
  2. Transfer the mixture to a greased baking dish. Top with the remaining cheese, and bake in the oven for 15-20 minutes until the cheese is bubbly and golden.
Serve
  1. Remove from the oven and allow to cool slightly. Serve warm, garnished with sour cream, chopped green onions, olives, tomatoes, and shredded lettuce.

Notes

For variations, use Greek yogurt instead of sour cream, replace the meat with black beans or lentils for a vegetarian option, or add jalapeños for a spicy kick.
