Ingredients
  

For the cookie dough
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons almond extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
For decoration
  • as needed Cherry blossoms (or cherry-flavored candy) for decoration

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and powdered sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla and almond extracts.
  4. In another bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Baking
  1. Drop tablespoonfuls of dough onto ungreased baking sheets.
  2. Press a cherry blossom or cherry-flavored candy onto the center of each cookie.
  3. Bake in the preheated oven for 10-12 minutes, or until lightly golden around the edges.
  4. Remove from the oven and let cool on the baking sheets for a few minutes before transferring to wire racks.

Notes

Serve slightly warm or at room temperature. Store cooled cookies in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months.
