Ingredients
  

Pasta Salad Base
  • 8 ounces rotini or fusilli pasta Feel free to swap for whole wheat or gluten-free pasta.
  • 2 cups cooked chicken, diced Rotisserie chicken works wonderfully.
  • 6-8 slices bacon, cooked and crumbled The more crispy, the better!
  • 1 cup cherry tomatoes, halved
  • 1 cup corn Frozen or canned.
  • 1 cup shredded cheddar cheese Mild or sharp, depending on your preference.
  • 1 cup ranch dressing Homemade or store-bought.
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish

Method
 

Preparation
  1. Begin by cooking the pasta according to package instructions until al dente. Drain and rinse under cold water to cool it down quickly.
  2. In a large mixing bowl, combine the cooled pasta, diced chicken, crumbled bacon, halved cherry tomatoes, corn, and shredded cheese.
  3. Pour the ranch dressing over the top of the pasta salad and toss gently to combine all ingredients evenly.
  4. Season with salt and pepper to taste, adjusting according to your preferences.
  5. If time allows, refrigerate for 30 minutes to let the flavors meld together; however, it can be served immediately if desired.
  6. Before serving, sprinkle with fresh parsley or chives for a pop of color.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To maintain optimal texture and flavor, add extra ranch dressing when serving leftovers.
