  • 4 pieces Chicken breast Boneless, skinless
  • 8 slices Bacon Thin-cut preferred
  • 4 oz Cream cheese Softened for easy spreading
  • 1 cup Cheddar cheese Shredded
  • 1 tsp Salt Adjust to taste
  • 1 tsp Pepper Adjust to taste
  • 2 tbsp Olive oil For drizzling

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. Spread cream cheese and shredded cheddar cheese on one side of each chicken breast.
  4. Roll the chicken breasts up tightly and wrap each roll with bacon.
  5. Secure the wraps with toothpicks if necessary.
  6. Place the wraps on a baking sheet and drizzle with olive oil.
Cooking
  1. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the bacon is crispy.
  2. Remove from the oven, let cool slightly, and serve.

Notes

Slice each roll into medallions for an attractive presentation, or serve whole. Add a dipping sauce such as ranch, honey mustard, or barbecue for extra flavor.
