  • 2 cups cooked chicken (shredded or diced) Leftover rotisserie chicken works perfectly.
  • 1 cup marinara sauce Choose your favorite brand or homemade.
  • 2 cups mozzarella cheese (shredded) For gooey cheese.
  • ½ cup grated Parmesan cheese For a nutty flavor.
  • 1 teaspoon dried basil For a hint of herbaceous freshness.
  • 1 teaspoon garlic powder To enhance the flavor.
  • ½ cup breadcrumbs For a delightful crunch on top.
  • to taste salt and pepper Season to your liking.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix the cooked chicken, marinara sauce, half of the mozzarella cheese, basil, garlic powder, salt, and pepper.
  3. Pour the chicken mixture into a greased 9x13-inch baking dish. Spread it evenly with a spatula.
Topping
  1. Sprinkle the remaining mozzarella cheese over the chicken mixture.
  2. Evenly distribute the grated Parmesan cheese and breadcrumbs on top for a crunchy finish.
Baking
  1. Place the casserole in the oven and bake for about 30 minutes or until the cheese is melted and bubbly and the breadcrumbs are golden brown.
  2. Once baked, let it cool for a few minutes before serving.

Notes

Feel free to substitute marinara sauce with pesto or add veggies like spinach or mushrooms for extra nutrition. Store leftovers in an airtight container in the fridge for up to 3 days. You can also freeze the casserole.
