Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment for easy removal.
- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
- In a large bowl, whisk melted butter and brown sugar until glossy. Add the eggs one at a time, beating until smooth and pale.
- Stir in mashed bananas, vanilla, and yogurt until fully incorporated.
- Fold the dry ingredients into the wet mixture with a spatula until just combined.
- Gently fold in chocolate chips and nuts if using. Save a handful of chips to sprinkle on top.
Baking
- Pour batter into the prepared loaf pan, smoothing the top.
- Bake for 50–60 minutes or until a toothpick inserted into the center comes out with moist crumbs but not wet batter.
- Cool the loaf in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For a more decadent loaf, fold in an extra 1/4 cup chocolate chips and sprinkle a few on top before baking. For a healthier option, reduce sugar by 1/4 cup and add 2 tablespoons of chia seeds.
