  • 1/2 cup unsalted butter, softened for richer flavor, use browned butter.
  • 3/4 cup granulated sugar swap half for brown sugar for a deeper molasses note.
  • 2 large eggs, room temperature or use 3 egg whites for a lighter crumb.
  • 1 teaspoon vanilla extract or try a splash of almond extract for a nutty lift.
  • 1 1/2 cups mashed ripe bananas (about 3 medium) very ripe, spotty bananas work best.
  • 1 3/4 cups all-purpose flour substitute half whole wheat for a healthy option.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 cup chocolate chips mix semisweet and dark for depth, or use mini chips for more even distribution.
  • 1/2 cup chopped walnuts or pecans (optional) toast for extra crunch and aroma.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×5‑inch loaf pan and line it with parchment for easy removal.
  2. In a large bowl, cream the softened butter and sugar until light and slightly fluffy.
  3. Beat in the eggs one at a time, then stir in vanilla and mashed bananas.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Fold the dry ingredients into the wet mixture just until combined.
  6. Gently fold in chocolate chips and nuts, saving a handful of chips to sprinkle on top.
  7. Transfer the batter to the prepared loaf pan, smoothing the top. Sprinkle the reserved chips for a pretty finish.
Baking
  1. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  2. Let the loaf cool in the pan for 10 minutes, then lift it out using the parchment and cool completely on a wire rack before slicing.

Notes

Use very ripe bananas for maximum sweetness. The loaf can be served warm or cooled for neater slices. Gluten-free or dairy-free alternatives are available by swapping ingredients.
