Ingredients

Wet Ingredients
  • 1 cup canned pumpkin puree Fresh pumpkin works beautifully as well, just blend until smooth.
  • 1 cup granulated sugar Replace with brown sugar for a richer flavor.
  • 1/2 cup vegetable oil You can substitute with applesauce for a lighter version.
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups all-purpose flour For a healthier twist, use whole wheat flour.
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
Mix-ins
  • 1/2 cup chocolate chips Feel free to use dark chocolate for an even richer taste.

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the pumpkin puree, sugar, vegetable oil, eggs, and vanilla until well combined.
  3. In another bowl, sift together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon. Slowly incorporate the dry ingredients into the wet mixture, stirring just until combined.
  4. Carefully fold in the chocolate chips to achieve that decadent, chocolatey goodness.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
  1. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. The bread will bubble and release a nutty aroma around the last few minutes of baking.
  2. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

To store leftover Chocolate Pumpkin Bread, wrap it in plastic wrap or foil and keep it in the refrigerator. It will stay fresh for up to a week. For longer storage, consider freezing slices. Wrap them individually and place them in an airtight container; they can last up to three months. Reheat in the microwave for a delightful warmth that brings back those cozy memories.
