Preparation
- In a bowl, combine the Greek yogurt, honey, and vanilla extract. Stir until smooth and creamy.
- Gently rinse the strawberries and slice them in half lengthwise, ensuring they are ready for dipping.
Coating
- Take each strawberry half and dip it into the yogurt mixture, ensuring it’s well coated.
- Place the yogurt-coated strawberries on a baking sheet lined with parchment paper and put them in the freezer for 30 minutes.
- While the strawberries are chilling, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each until smooth.
- Once the strawberries are set, dip each one into the melted chocolate, making sure to cover them evenly.
- If desired, sprinkle crushed nuts or sprinkles on top of the chocolate before it hardens.
- Place the chocolate-coated strawberries back in the freezer for 15 minutes to allow the chocolate to set fully.
Notes
These chocolate strawberry yogurt bites can be made ahead and stored in the fridge for up to three days or in the freezer for up to a month. Let them thaw in the fridge before serving again.
