  • 1 pound sausage, cooked and crumbled Cook and drain well to avoid greasiness.
  • 30 ounces hash browns, thawed Squeeze out excess moisture if watery.
  • 1 cup shredded cheddar cheese Can substitute with pepper jack or Swiss cheese.
  • 6 large eggs Let the egg mixture sit for 10 minutes for fluffiness.
  • 1 cup milk Add more for creaminess if desired.
  • to taste salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 cup chopped green onions Optional, for garnish.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked sausage, hash browns, and shredded cheese.
  3. In another bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder.
  4. Pour the egg mixture over the sausage and hash brown mixture, stirring to combine.
  5. Grease a 9×13 inch baking dish and pour the mixture into it.
  6. Bake in the preheated oven for 45-55 minutes, or until the eggs are set and the top is golden brown.
  7. Let it cool for a few minutes before serving. Garnish with chopped green onions if desired.

Notes

Let the casserole rest 5–10 minutes before slicing. Pairs well with fresh fruit, hot coffee, and toast. Store leftovers in an airtight container for up to 4 days. Can be frozen for up to 2 months.
