  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour (or whole wheat flour for a healthier twist)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
For the streusel topping
  • 1/2 cup flour
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup cold butter, cut into small cubes

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9-inch square baking pan.
  2. In a bowl, mix together the pumpkin puree, granulated sugar, and brown sugar until well combined.
  3. Add the vegetable oil, eggs, and vanilla extract, and stir until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
Streusel Topping Preparation
  1. To prepare the streusel topping, combine flour, brown sugar, and cinnamon in a bowl. Cut in the cold butter until the mixture resembles coarse crumbs.
Baking
  1. Spread the batter evenly in the prepared baking pan and sprinkle the streusel topping generously over the top.
  2. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
