Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, whisk the melted butter with the brown sugar until shiny and smooth.
- Add the eggs one at a time, then stir in the mashed bananas, yogurt, and vanilla.
- Pour the dry ingredients into the wet mixture and fold gently with a spatula until just combined.
- Fold in nuts or chocolate chips if using.
- Pour the batter into the prepared pan, smooth the top, and sprinkle the reserved chips or extra chopped nuts.
Baking
- Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Let the loaf cool in the pan for 10 minutes, then lift it out and cool on a wire rack.
- Slice after it’s mostly cooled to preserve the tender crumb.
