Dry Ingredients

Preparation
  1. Gather your ingredients and let the eggs and milk come to room temperature.
  2. Mash the bananas until mostly smooth; a few small lumps are fine.
  3. Add wet ingredients to the bread pan first: mashed bananas, eggs, melted butter, milk, brown sugar, and vanilla.
  4. In a bowl, whisk the flour, baking powder, baking soda, salt, and cinnamon. Sprinkle the dry mixture over the wet ingredients in the bread pan.
  5. Add the mix-ins: scatter walnuts or chocolate chips over the top (do not stir).
Baking
  1. Set your bread machine to the quick bread or cake setting.
  2. During the first few minutes of mixing, check the batter’s consistency. If too dry, add 1 tablespoon of milk at a time; if too wet, sprinkle 1 tablespoon of flour.
  3. Let the machine do its magic.
  4. When the bake cycle completes, carefully lift the pan from the machine.
  5. Cool the loaf in the pan for 10 minutes, then gently invert onto a wire rack to cool completely or slice slightly warm.
