  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup broccoli florets
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Preparation
  1. Cook the chow mein noodles according to package instructions. Drain and set aside.
Cooking
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Add the garlic and ginger, stirring for about 30 seconds until fragrant.
  3. Add the sliced bell peppers, carrots, and broccoli. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Add the cooked chow mein noodles and soy sauce to the skillet. Toss everything together for another 2-3 minutes until well combined and heated through.
  5. Season with salt and pepper to taste. Serve immediately.

Notes

Serve immediately while hot. Garnish with sliced green onions, toasted sesame seeds, or a drizzle of sesame oil for extra aroma. Pair with steamed dumplings, a simple cucumber salad, or plain steamed rice if you want more volume. Prep first: have all vegetables sliced and noodles ready before you heat the pan—stir-frying is fast. High heat and quick tosses give the best texture.
